Veggie meatball recipe
2 cups cracker crumbs
2 cups walnuts or pecans smashed pretty fine
2 cups shredded Cheddar cheese (soy cheese also works if you’re vegan)…2 tbsp. poultry seasoning, onion soup, beef seasoning, au jus or some such (I also like to throw in a teaspoon or two of sage)
6 eggs (egg substitute should be fine)
1 lg. onion, chopped fine or grated
Form into balls and bake at 350 for about 12-15 minutes until nice and brown. Put in pan or crockpot and cover with spaghetti sauce, sweet and sour or barbecue sauce. Heat in oven for about 30 minutes or slowly warm in crockpot for several hours.
